Grilled Steak with Brown Butter & Chives, Grilled Potato Salad with Mustard Dressing, and Grilled Broccoli

 

 

Want to try something a little different with your steak? Brown butter is the answer! And, I would confidently say that brown butter may be the answer to many, many situations.
Brown butter is just butter that has been heated until it turns brown. Some of the liquids evaporate, and the proteins cook, leaving it with a deep nutty flavor.

Grilled Potato Salad with Mustard Dressing

I only changed a couple of things to this recipe. I used tiny purple potatoes, instead of red, just because. I also added a pinch of red pepper flakes to the dressing, and used olive oil all around, instead of canola. And of course I added extra garlic and microplaned it.

*Grill the potatoes first, then while the steak is on, you can dress them.

Grilled Steak with Brown Butter & Chives, with Grilled Broccoli
Prep: 5 min Cook: 15min Serves: varies
Steak, as much as you need and any cut you desire, I used KC Strip
Butter, 1/4 to 1 stick, sliced into TBS
Chives, 1-3TBS chopped
Broccoli, 1 head, washed, dried and cut from stalk

  • Allow steak to come to room temp 30min-1hr.
  •  Preheat the grill to med-high heat.
  • Salt and pepper the steak just before you put it on the grill, liberally to your tastes.
  •  Grill steak to your desired temp.  7 to 11 min for medium-rare, 9-12 for medium and 11-15 min medium-well, turning once, half way through.
  • While the steak is grilling, add the butter to a light colored pan (to see the color of the butter) and turn to medium heat.
  •  Basically, stir constantly, for about 3-5 minutes. It will bubble a lot and look scary at times, but see it through until the bubbling dies down and the butter begins to turn a golden color.
  • Turn the heat off just before it reaches the perfect color and pour into heat safe bowl. It is really important to turn it off before it reaches the desired shade as it will continue to cook when removed from the heat and can easily burn. Whatever you do not use will store in the fridge for about 2 weeks. You can use this in many other ways- google it!
  •  Take the steak off the grill when ready and allow it to rest 5-10 minutes.
  • Grill the broccoli while the steak is resting. Spray or drizzle about 2 TSP olive oil on broccoli with a sprinkle of s&p. I just put it in the same foil grill pan I used for the potatoes and grilled for about 3-4mins each side.
  • Slice your steak or leave it whole and top with a spoon of brown butter and a pinch of chives and serve with the sides!
